Good Carbs Tuna Salad

Ingredients for one person:

  • 200g mixed salad
  • ¼ avocado
  • 100g cherry tomato
  • 100g tuna fresh or can in water
  • 10 olives
  • 1 spring onion
  • 75g roseval potatoes or sweet potato
  • 75g green beans
  • ¼ bunch of parsley
  • 1 tablespoon olive oil
  • 2 tablespoons of lemon juice
  • alt and pepper
  • 1 boiled egg

Preparation: Add the salad, tuna, olives, chopped avocado, tomato, parsley and spring onion with boiled beans and potatoes in a bowl and refine with dressing, as well as salt and pepper as desired.
